James Hamamori
At a youthful age of 17 years, a small town Japanese boy dreamt of possibilities yet to be discovered. A few years later that young man, who is now known as Chef James Hamamori, became one of a select few to pioneer the revolving sushi conveyor belt concept in New York City during the early 70’s. A decade later he traveled west to California seeking to explore and expand the boundaries of traditional Japanese cuisine, which would eventually evolve into what he now calls “New Generation” Sushi. During Chef Hamamori’s tenure at Asakuma, a long time favorite sushi restaurant in Los Angeles, his creative mastery of sushi and sashimi earned the praises of the local Los Angeles community as well as Hollywood executives and entertainers such as Michael Ovitz, Dustin Hoffman, Cindy Crawford, etc.
In late November 2001, Chef Hamamori serendipitously crossed paths with restaurateur and businessman, Bronnie Lee. Together they formed a partnership, opening the first of several Wasa Sushi restaurants. Their aim was to build a restaurant dynasty showcasing a “New Generation” of sushi forged by the innovative, fun-loving heart of Chef Hamamori, and grounded by the morally conscious, business savvy of Mr. Lee. That vision ultimately inspired dishes that honored both Japanese culinary traditions as well as contemporary tastes. Chef Hamamori used only the freshest fish and ingredients available in order to add his distinctive sauces, finishing each dish with an artistry that is a feast for both the senses as well as the soul. As a result of Wasa Sushi’s growing success, BKB Restaurant Enterprises, Inc. is proud to unveil their latest project in a pursuit to becoming the most exclusive Japanese restaurant in Orange County.
